Gretchen Polhemus began her career in 1985 as a livestock dealer and real estate agent in her home state. Later, in 1987, she competed as Miss Bedford USA in the 14th edition of Miss Texas. She got the Photogenic award for her performance and finished second to the winner, Courtney Gibbs.

Polhemus competed as the official representative of her state in the 1989 Miss USA pageant, which was held in Mobile, Alabama. She finished sixth in the semifinal interview in the Miss Universe contest. In addition, she appeared as a salon girl in the made-for-television film Bonanza: The Return in 1993.
